Fluffy Vanilla Tapioca Pudding
Yields 4-6 servings.
1/3 cup small pearl tapioca
3/4 cup water
2 1/4 cups milk
1/4 teaspoon salt
1/2 cup sugar(divided into two 1/4 cup portions)
2 eggs, whites and yolks separated
1 vanilla bean pod
- Soak tapioca in water in a saucepan for 30 minutes, do not drain.
- Add milk, half the sugar and beaten egg yolks to the tapioca and water. Heat over medium heat, stirring frequently for 15 minutes.
- Beat remaining sugar, egg whites, and vanilla bean scrapings until fluffy and soft peaks form.
- Fold 3/4 cup of hot tapioca mixture into the egg whites, then gently fold mixture back into saucepan. Stir over low heat for about 3 minutes.
- Let chill and serve.
